Bour Mish Nihonbashi Takashimaya Store: Full-fledged French Confectionery famous confectionery

We visited Bour Mish Nihonbashi Takashimaya, a Western confectionery shop with a fragrance of France.

Mr. Kimura, Chief of the Japanese and Western Confectionery Section, Takashimaya Nihonbashi Store, took care of me.

Bour Mish departed from Shibuya in 1973 and opened the Ginza Main Store in 2004, and is a pioneer of authentic French sweets in Japan. It has been 30 years since the Nihonbashi Takashimaya store opened.

 

Storekeeper: There are baked sweets and raw sweets of deliciousness and beauty that fully expresses the passion and technology of Kikujiro Yoshida.

"Bour Mish" is the name of the store, which shrinks Bour Bar San Michelle, the main street of Paris. It is the root of the shopkeeper's training in Paris.

For baked goods, truffle cake. It is baked with one grain of truffle chocolate inside.

This is a masterpiece that continues to win the World Food Contest Mond Selection Gold Award together with Gato O Marron. Of course, in 2016, we won the highest gold prize.

Of the four layers, the second layer from the bottom contains apples and fresh cream sauteed with butter, and the third layer contains clay mushi boost (cream that combines custard cream, gelatin, and murang [= meringue]). The recipe left behind by Shibust, a famous court confectioner, was excavated and reproduced by the owner for the first time in 150 years.

TOKYO 2020 OFFICIAL SHOP in Tokyu Plaza

⑧ About meeting with Mr. Rokusuke Ei

"The encounter with Rokusuke Ei, who died on July 7, is NHK's live broadcast variety program "Let's dream!" I wasn't the performer at that time. My brother happened to come out, so "Do you not come?" I was invited to observe the filming. There, Mr. Naga or composer Hachidai Nakamura came and got to know him. Mr. Naga often went to rural areas, so he knew about kogin sashimi. It's been about 50 years ago.

"As I said, I don't have much work on my own, so at my exhibition for nearly 10 years, I was borrowing and exhibiting my work owned by Mr. Ei. This is the Rokusuke Ei Collection (the two photos below). This is from Takashimaya Nihonbashi (creative kogin sashimi exhibition) two years ago. This photo is a photo sent by Mr. Naga before his death (upper photo). This is also my work. In a video of a certain TV station in memory of Mr. Naga, I put it on my knee without wearing this half coat. "

Kogin sashimi Thursday party-Rokusuke Ei's favorite half-wear- ①

Today, we visited the Ningyocho Classroom of Kogin Sashi Thursday Association Co., Ltd., and talked to Mr. Hiroko Takagi, the director of Kogin Sashishi writer and lecturer.

First, the explanation of Koginzashi.

Traditional techniques, folk art embroidery, and traditional crafts were born in the Tsugaru region of Aomori Prefecture, with unique geometric patterns made with white cotton threads on indigo (navy blue) fabric. The difference from other sashiko is to stabb odd eyes on the vertical weave.

In 1724 (Kyoho 9), the "Farmhouse Frugality Ordinance" strictly regulates farmers' work clothes. The prohibition of cotton kimono, even in the cold region of the northern country, hemp kimono was allowed. You can't lining it.

So the girl in Tsugaru thought.

Fine embroidery is applied to the shoulders, back, and arms of the hemp kimono. The idea of reversal is to thicken the fabric, enhance the heat retention effect, make it durable, and evolve it even more aesthetically.

This is the root of kogin sashimi.

In the Tsugaru region, the stray clothes were called Kogin (both small cloth and small width), so this name was given.

In addition to preserving the tradition, modern creative kogin sashimi arranged with new designs and colorful dyed yarns are also popular. I'm good at this classroom.

① About meeting with kogin sashimi

"There was a small sting in a hotel where I happened to go to Lake Towada with my friend and stayed there. Seeing it, she asked her, "What is this?" When I heard that it was stabbing, "Well, where are you doing this?" When I heard that, I was told that no one was doing it right now in Aomori. I was told that if I was collecting it, I was in Aomori City, and I was introduced to that person, but that person was an ethnologist Chusaburo Tanaka. I've already died. When I jumped into that person and talked about the stabbing, he said, "Oh, Tokyo's Hitogane, do you try it?" And I got a small piece, and that's the beginning."

I'm doing it from a place where it's easy to do as a design. ・・ ・From orthodox ones to pictorial ones like the fifty-three, the works are wide."
