This time, there are three places to visit: [Kiya], [Kaishin], and [Yamamoto-noriten]. All of them are long-established stores that have been around since the Edo period, and are only famous stores with many fixed customers.
The first thing I visited was Kiya. The reopening on the first floor of [Cored Muromachi] is a new place to remember, but we also have old-fashioned items and products based on new concepts, so you will never get tired of it.
On this day, they practiced how to sharpen kitchen knives. I realized that the sharpness of the kitchen knife will change so much depending on how you sharpen it. Also, listening to the story that the way of sharpening depends on the direction of the handy arm, it is said "convincing!"
The next one I visited was Mr. This shop, which originated in Ise and Kuwana, is famous for its unique flavorful "Shigure-ni". In addition to the “Clam” related to Kuwana, “Ami” and “Konbu” “Shijimi”, all have an appetizing scent.
When I visit the shop, I am just impressed by the depth of the taste because the seasoning differs depending on the ingredients, as well as adjusting the sweetness and depth according to the season and climate.
The last thing that bothered me was Yamamoto-noriten. We commercialize fragrant seaweed based on materials collected from paid production areas in Japan, including Kyushu and Ariake Sea.
It seemed quite difficult to distinguish the good or bad of seaweed, but the easiest way to understand seems to be "eat and delicious". Recently, many overseas customers have visited in search of the high quality of Japanese seaweed.
Nihonbashi is full of other long-established stores. It is a rich time to shop while receiving explanations of the products along with history and history.
