Chinese Zenbo "Leihua" LAI-KA - Kenmi Fukuju's medicinal Chinese-

[Desire purple] July 13, 2011 08:30

The hot day continues. The rainy season has just started, and the full-fledged heat is about to begin, but many people may be feeling a little summer batter. How about a delicious and healthy "medicine Chinese" for such people?

It seems that 'Yakuzen' originally meant only to 'serve decoction' in China, and 'Chinese cuisine using Chinese herbal medicine ingredients as it is now. It is not so old that it is commonly recognized as a diet born from the idea of Chinese medical and dietary sources as a diet for maintaining health (Daijisen), but it is not so old that "Yakuzen" (Shinfu), which opened in Ginza in 1985, seems to be the first. The chef at this time is Rei, the owner chef of this restaurant. The current Reihana is the third year since it moved to the 7th floor of the building at the Mihara Bridge intersection overlooking the Kabukiza Theater under renovation.

Today, we have a lunch medicinal course (3,150 yen)

The composition of 6 dishes is 4 kinds of appetizers, medicinal soup, steamed tofu yin-yang sauce, shrimp rice paper wrapping fried (with avocado sauce), Chinese porridge, or Chinese soba, apricot tofu

"Medicinal Soup" is made by adding green needles, white wood ears, kuko, daijube, and lily herbal medicines to chicken and simmer over time, and winter melon containing plenty of this rich flavor melts in your mouth.

The steamed tofu with crab meat is served in combination with sauces derived from two types of Onyang five lines, spinach and crab egg. It is said that a balanced combination of warming and cooling keeps the human body healthy.

The dessert is a soft apricot tofu that has been popular since the Hoshifuku era. The two flavors of sesame and matcha are exquisite. I miss eating this apricot tofu, which was rare at that time, and I went to lunch at Hoshifuku.

By the time I finished eating dessert, I feel happy as if I had a summer dazzle. The theme of Reihana is "Kenmi Fukusou" (a happy dish that spills smiles unintentionally. It is a healthy food that can be healthy and beautiful.”

By the way, the word "medical food dogen", which is associated with Chinese medicinal dishes, was coined by Dr. Yuhisa Arai in 1972, and is now used by China in reverse import. It is recommended for the real heat.
