There is a famous Nagasaki restaurant "Yoshimune" on the first basement floor of the same building as Cafe Paulista, Nagasaki Center Building in Ginza 8-chome. It is the same kanji store name as Yatsushiro Shogun, but it is read as "Yoso". It is said that the first shopkeeper, Sokichi Yoshida, named the store name and opened a branch in Ginza in 1970 as the Tokyo branch of "Nagasaki Yoshimune".
"Nagasaki Yoshimune" is said to be ordered as a necessity for wedding celebration, sushi called "married steamed" and "chawan steamed" cooked with elegant soup stock.
I heard about the reputation of Mr. Hayashima of the company, that the chef of a nearby super famous sushi restaurant also introduced his favorite things on "Ginza 15th Street".
I ordered a service set of chawanmushi and Nagasaki Champon (today I ordered thick noodles). The chawanmushi contained nine types of ingredients (fu, shiitake mushrooms, kikurage, chicken, red and white, blue and white kamaboko, ginkgo, bamboo shoots, and eel fillets, 10 ingredients. It's a very elegant soup stock. Champon also uses elegant soup stock and is genuine. Please go out once.
