The soba shop "Seiya No. 9" also appeared on TV

This time, we will introduce the recommended soba shop, Makotoya No. 9 store in Ningyocho, from many soba shops in the Nihonbashi area. If I can go, lunch is OK in 5 a week. It is a delicious soba restaurant that you can use everyday, never get tired of eating every day.

Located about a 5-minute walk from Ningyocho Station, this shop is named "No. 9", but here is only one soba shop. (On the recently renewed homepage, "No. 9" was taken and became "Ningyomachi Makotoya". By the way, "Shin" is the name of the owner's father.)

Rather, it is a self-service store that looks like a stand-up soba, and although it is a dressing-only store, it is a system that buys a meal ticket at a ticket vending machine, passes it over the counter, and goes to pick it up when it is completed. Nori, seaweed, seaweed, fried balls, wasabi, etc. are prepared at the pick-up port, and add it yourself.

Mori soba is 500 yen in average (200g), 600 yen in medium (300g), 700 yen in large (400g). The popular gravy soup soba is 680 yen, everything is reasonable.

By the way, near the heart, flat noodles with a thickness of about 1 to 1.5 mm are truly beautiful. A variety of shaded coarse ground buckwheat grains are mixed in the overall transparent fabric. The tongue catches the rough feel of coarse ground soba, and at the same time, the scent of soba follows. Draining is perfect, and you can feel firm.

The taste of the soba I was looking for was coarse ground soba that my mother hit at my parents' home when I was a child. I hope you can enjoy that feeling in Tokyo. Moreover, the cost performance is high!

Next, put a small amount of green onions and wasabi on the side and soak them in soup. It is said that soy sauce with less sweetness is used in this season. It is slightly returned and the taste of soy sauce rises, but I think this is the best match in this country side with strong habit. If it was too sweet, it would be fun.
It is said that buckwheat flour is usually made from North America. And in the evening part, the small noodles of 10% domestic soba flour are offered. This is delicious again!

The soba hot water in the pot is cloudy and seems to contain a lot of rutin, and hot. I'll put it in right away if it's gone. There is also a soba inoguchi at the reception, so I'm grateful when you have soba hot water.

If you register as a member, you can receive the tempura service of the day every time. Currently, there are eight types of weekly service products that I am checking.

You will receive an email of "This week's Service" at 7:00 am Monday. Just show the image when you give your meal ticket, and tempura is served. Isn't it a nice service even though it's small!

There is a reason why Makotoya's soba is delicious. Mr. Fukuda, a shopkeeper from Tochigi Prefecture, actually his original occupation is a salesman in charge of soba flour, a major milling manufacturer. Soba flour is noisy because he is a master who knows the features and properties of soba flour.

By the way, the current lunch coarse soba seems to have reached "Soba flour 7: flour 3" as a percentage to draw out the scent of soba and flatten it.

Another face of this shopkeeper, in fact, is a big fan of Eikichi Yazawa. In the evening section, from 17:00 to 20:00, we also open at the same time as acoustic live.
