[rosemary sea] March 30, 2017 16:00

This is a rosemary sea, featuring "gifts and enjoy yourself" as an accent.

DSC02116a.jpgKoju Ginza is located on No. 1 of the Yaesu Underground Shopping Center.

Kaju Mikasho was founded in the Tensho era. This means that more than 400 years ago, when Nobunaga Oda's world catch and history overlap.

I was born in the capital of Kyoto.

The shop here in Yaesu Underground Shopping Center also has a history of 40 years.

Mr. Kitazawa, the manager of the Ginza Kaju Tokyo store, gave permission for the interview.

Based on the headwater of Japanese incense culture, we have created a new Japanese fragrance culture.

This time, I would like to introduce the products that Mr. Kaju handles.

First of all, from incense stick. It's from high quality.

famous confectionery from all over Japan - Nihonbashi Mitsukoshi Kayuan ②

[rosemary sea] March 29, 2017 14:00

The rosemary sea is a list of "gifts and I enjoy myself" and cover it.

DSC02103a.jpgKayuan has a collection of famous confectionery from all over Japan.

Last time, I focused on product information.

This is the history edition.

We visited a shop on the first basement floor of Nihonbashi Mitsukoshi Main Store.

This time, I was also taken care of by Isemoto, the head of the Kayuan shop at Mitsukoshi Nihonbashi Main Store.

In 1950, a historical confectionery manufacturer from all over the country launched the “National Confectionery Industry Cooperative” with the aim of fostering goodwill and technology.

In November of that year, we held a “National famous confectionery Reconstruction Exhibition and Sale” at Nihonbashi Mitsukoshi Main Store. Since this was very popular, it has been held once a year since the second edition of the National famous confectionery Exhibition.

However, since there were too many customers looking forward to this event only once a year, Mitsukoshi thought that a similar project could be made at the permanent sales floor in response to your request.

In November 1984, the “Traditional famous confectionery” section was opened at Nihonbashi Mitsukoshi Main Store in November 198famous confectionery.

Then, the “Traditional famous confectionery” section grew significantly while increasing the number of products handled, and in 1988, it was renamed the current “Kayuan”.

He said that he will continue to focus on carefully selection and assortment so that the excitement of the taste of "delicious", "want to eat again" and "to that person" can be further enhanced.

I'm thrilled. We look forward to seeing you in the future.

famous confectionery from all over Japan - Nihonbashi Mitsukoshi Kayuan ①

[rosemary sea] March 28, 2017 09:00

This is a rosemary sea, which covers "gifts and enjoy yourself" as a policy.

DSC02102b.jpgMr. Kayuan has a collection of famous confectionery from all over Japan.

This is a select shop of sweets carefully selected with Mitsukoshi's unique taste and sensitivity.

We visited a shop on the first basement floor of the main building of Nihonbashi Mitsukoshi Main Store.

Isemoto, Mitsukoshi Nihonbashi Main Store Leader, Kayuan Shop Leader.

Kayuan has a wide variety of confident sweets, such as gems from long-established and famous stores all over Japan, seasonal flavors, and local flavors that continue to be loved.

Therefore, it is lined up as a famous store, "famous confectionery of famous store" instead of a famous store.

And why is it delicious? It seems that only sweets with a story that can answer the question are selected.

And there are two styles, "standard sweets" that can be tasted at any time, and "this month sweets" that match the season.

The purchase is self-service form. You can freely put your favorite sweets in a basket as much as you like.

There are two types of baskets, plate size and basket size. It's also possible to buy it as much as you want.

From here, I would like to ask the Ise shop leader.

"Even if you don't want customers to travel around the countryside, I think the pleasure of shopping is that raw sweets made in the morning near Tokyo and the long-established sweets from Kyoto enter the same basket and you can choose as much as you like. That's the charm of our shop that I personally want to convey to our customers."

I would like to introduce the product.

DSC02094a.jpg DSC02095a.jpg

Ajari-mochi (Ajarimochi) in full moon, Kyoto.

It is a sweet with a tight circumference and a full grain inside.

Ajarashi is a high priest of Mt. Hiei, a high-ranking monk. It's called Ajirokasa of Ajarashi.

It's a name from there. There are a limited number of places that can be purchased in Tokyo.

On many days, about 2,000 pieces a day come out."

DSC02098a.jpg

Chomeiji Sakuramochi (center, upper and middle) in Mukaijima Yamamoto, Tokyo.

"There is a shop near the Sumida River, we handle it all year round, but customers' demands are high at this time.

It is made by wrapping Koshian with thin baked skin that Edokko customers like.

In particular, this year is the 300th anniversary of Sakuramochi. Thanks to that, our customers' requests are growing more than usual.

It arrives every Thursday and Friday at around 11:00."

DSC02092a.jpg

Kurumiko from Beniya, Kamakura.

"It's in stock three times a week, but this is also a best-selling popularity.

It's a homemade caramel made with a lot of walnuts sandwiched in thin cookie dough.

It is a sweet that is very popular with female customers and is very popular with many inquiries over the phone.

Men are also recommended as a casual gift to women around you."

DSC02105a.jpg

Pomdamur of Kobe No. 1 building in Hyogo. It's a standard product.

"It's a sweet made of apple pickles wrapped in a little bitter chocolate.

It is a popular snack that is one of the five fingers of our about 400 kinds of sweets. "

DSC02091a.jpg

Anmitsu from Kameido Funabashi-ya, Tokyo.

"It arrives in the afternoon four times a week on fire, tree, Saturdays and Sundays.

(The interview date was Thursday, around 1:00 p.m. Funabashiya was just in stock and was lined up on the sales floor. )

It's anmitsu with kuzumochi in cup size. It's easy and it's a long-awaited snack today. "

DSC02099a.jpg

A corner of tea ceremony sweets from all over the country.

"I feel that the number of people who don't make matcha is increasing.

It is a recommended corner because it has the charm that you can assortment and compare the pastry sweets here.

You can choose fresh sweets for about 250 to 300 yen per piece.

From very cute things to beautiful kneading, you can enjoy from one.

It is "selling" that you can decide based on your favorite combination."

Next time, I will talk about Mr. Kayuan's history.

Additive-free, special taste-senbei and Kihachido- ②

[rosemary sea] March 25, 2017 09:00

This is rosemary sea, which covers "gifts and enjoy yourself" as a decision making.

DSC02065a.jpgKihachido of the rice cracker, this time I will introduce a lot of products.

This time, I also took care of Mr. Tozuka, the manager of the Yaesu Underground Shopping Center at Kihachido Tokyo Station.

Well, I would like to introduce the product immediately.

DSC02076a.jpg

Kihachi Senbei (assorted).

A signboard product with the name of the shop. He won the Mond Selection Gold Award for the third consecutive year.

It's a little small, this is just right. Rice crackers with good taste and firmness.

Simple and delicious orthodox. It's finished with raw soy sauce.

DSC02058a.jpg

Once upon a time, Daimaru [Old Daimaru] (assorted).

Large-sized, hard-baked authentic rice crackers using homemade natural soup stock.

The same size, thickness, and taste at the time of its founding. A powerful rice cracker that can be bitten by a burr.

Among them, the most basic assortment of glue, sesame and soy sauce flavors.

DSC02079a.jpg

Raft sink (assorted).

Long and thin shape like a raft down the river. It's changed if you have a rice cracker.

Three kinds of seaweed, soy sauce, and zalame flavor. This is also an old product.

DSC02059a.jpg

Pepper rice cracker.

Please note that is extremely hot. It's really spicy. Don't be sweet.

"I can't eat it for ordinary people."

But it's the best gem for those who can eat it.

DSC02082a.jpg

Tokyo Senbei.

It has been loved at Tokyo Station for 40 years.

9 rice crackers. One bag of delicious tea that matches the taste is contained in a set.

Tokyo souvenirs and gifts are perfect. The naming is also decided.

DSC02088a.jpg

Hand-baked.

Hand-baked craftsmen baked one by one with all their heart.

It's a real soy sauce cracker.

Of course, only rice and soy sauce are the raw materials, but of course raw soy sauce.

In addition, Hachiro Iwako (Ganko Yaro), sunboshi, and okoge are also popular.

Hachiro Iwako, it's a stubborn, solid naming.

It was bought up on the day of the interview and unfortunately it was sold out.

Additive-free, special taste-senbei and Kihachido- ①

[rosemary sea] March 23, 2017 09:00

It is rosemary sea, which covers "gifts and enjoy yourself" as a life work.

DSC02086a.jpgMr. Kihachido, one of the few specialized company organizations in Japan and in the world that consistently performs everything from rice selection to baking at one company. That rice cracker.

Kihachido Tokyo Station Yaesu Underground Shopping Center Tozuka was taken care of.

Founded in Kanda in 1927, the current head office is located in Noda City, Chiba Prefecture, but it has been a long-established store for more than 40 years since opening a shop in the Yaesu Underground Shopping Center of Tokyo Station.

Kihachido's commitment to rice crackers, it is additive-free.

Since its establishment, most products have not used preservatives, colorings, additives, or chemical seasonings.

I can't help curry rice crackers, seeds, etc. No other than those.

This is also called "Selling" by Kihachido. Of course, the taste is also exceptional.

DSC02063a.jpg

In addition, the taste of the ingredients and the taste of nature are valued. That's why I'm particular about raw materials.

Raw materials are rice (glutinous rice). That's also something that can be eaten as rice.

It does not take care of easy-to-use imported rice, crushed rice, or old rice.

・・I learned a lot about this. You can make rice crackers with glutinous rice, oysters, and glutinous rice.

This is an introduction of the product. Sen Taro.

DSC02083a.jpg

It's the most popular. No additives are sold, but Mr. Kihachido, the taste is also great. I'm going to do it.

After baking, I break it while it's hot, and then add soy sauce.

That's why the taste is firmly soaked in the rice crackers.

It's the saltyest and richest dish, but it's tasty and delicious.

DSC02084a.jpg

The secret story of the birth of this rice cracker, Sentaro.

About 20 years ago, a craftsman baked and made it for himself.

The customer who was watching it, "Please give me that too."

DSC02070a.jpg

Senbei that I don't see now, that's Taro.

Normal rice crackers are sweet somewhere.

This rice cracker is really only raw soy sauce (Kijoyu). Simple is vest.

It also uses "raw soy sauce (same as Nam soy sauce, character Haki Jyoyu)".

※ What is Jyoyu?

Pure soy sauce without adding dashi or seasonings. However, the burning process, so-called heat sterilization, is performed.

※ What is Namama Soy Sauce?

The previous stage of Jyoyu. Those that have not performed the burning process after squeezing the moromi.

As a rice cracker, it is baked in the end, so if you use Namama soy sauce, the scent will remain and the taste will be mellow.

As a soy sauce, Kikkoman is appealing "Nama Soy Sauce" on TV commercials. That name soy sauce.

Here we tasted the rosmary food lipo corps, Sen Taro.

Mr. S Yama. "The moment I put it in my mouth, the scent of soy sauce came out of my nose, and the aroma was an appetite-inspiring taste."

Mr. F Yu. "It was a taste of rice crackers that matched Japanese tea."

Mr. Kko. "A nostalgic taste that reminds me of childhood. It's a delicious taste that makes you want to reach out again."

Mr. S branch. "It looks hard, but when I chewed it, it was easy to eat even if my teeth were bad."

Mr. Ikura. "I enjoyed it with just the right hardness."

Mr. Tsan, 3. "The raw soy sauce spreads all over the mouth and matches the chewy texture."

Mr. F River. "The soy sauce was savory and it was delicious like a cracker."

Mr. T. 2. "It has a strong and firm taste, and the lingering lingering after eating."

O. "Soy sauce crackers, an orthodox Japanese taste."

Introducing products, this time only one product. I'll do it next time.

I will talk about the history of Mr. Kamo 2-Shigeru-

[rosemary sea] March 9, 2017 09:00

This is a rosemary sea, which covers "gifts and enjoy yourself" as a trend.

Mr. Shigeru Nihonbashi, the history of 329 years has not been fully introduced yet.

We interviewed President Takashi Kami Shigeru Inoue.

DSC01963a.jpgEntrance to the Imperial Household Agency (Gomonkan).

"The so-called passing bill. In the early Showa era, there was a system in which a merchant presented this pass when entering and leaving the Imperial Household Ministry. "

※ What is "Honodawara-cho, Nihonbashi-ku" in the gatebook?

Nihonbashi-ku: Meiji 11 (1878)-Showa 22 (1947)

Merged with Kyobashi Ward to form Chuo-ku

Hon-Odawara-cho: Edo period-Showa 7 (1932)

Divided and renamed Nihonbashi Honmachi 1-chome and Nihonbashi Muromachi 1-chome

"Emperor Meiji, Emperor Taisho, and Emperor Showa were all kamaboko at the time of his throne.

I went in and out of the Imperial Household Ministry in the New Year."

DSC01966a.jpg DSC01965a.jpg

"It's a so-called Daifuku Book, a so-called Daifuku Book in the Meiji era.

When it was the Nihonbashi Fish Market, I had the fourth largest area of land and rented a place."

"This is a book that wrote that I received this month when I was lending one board with Itabuneken (described later)."

(Itafune rights: rights that have been granted on the Nihonbashi Fish Bank since the Edo period.

Here, a flat plate (= board boat) with a width of 1 shaku and a length of 5 and 6 shaku can be arranged to sell fish.

High-value rights that could be bought, sold, transferred, or rented as so-called goodwill. )

"The rest is written as blankets during the Russo-Japanese War and visits to the Army Injury."

DSC02044a.jpg

DSC02041a.jpg DSC02047a.jpg

"It seems that there is a shop like that in Kidai Shoran (described later), but there is no clear evidence."

emakimono depicting the current Chuo-dori from Nihonbashi to Imagawa Bridge in 1805.

There is a replica of about 17m in the concourse of Tokyo Metro Mitsukoshimae Station. )

DSC01973a.jpg"This is a signboard, but it was originally a cutting board.

The cutting board of Kamabokoya is thick, and you use the back of a kitchen knife to beat the meat of the shark on it.

So, if you put it in only the middle, it flattened it, and if it became difficult to use it, it seems that a Japanese restaurant etc. was bought as a normal cutting board at the end.

The rent receipt mentioned earlier also states, "I sold cutting boards to any restaurant anywhere."

DSC01976a.jpg

"This sign is now hung in the reception room like this, but as the original sign, it was raining, so if you ask" Please clean ", it became too beautiful and became new . "

"The photo on the left is a picture of the pre-war store.

There is a sign saying "Kami Shigeru" on the top, but it is completely dark and invisible. "

DSC01975a.jpg DSC01992a.jpg

DSC01986a.jpg DSC02012a.jpg

"This is the February 1954 issue of the Living Notebook.

The dictation of Hama Inoue, my grandma, is written.

He talks about half-pan ingredients, the manufacturing process, the history of Shigeru Kami, and how to eat half-pan.

There is also a story about the cutting board earlier."

DSC01993a.jpg DSC02008a.jpg

DSC02031a.jpg

"It's the menu for the arrival of Perry in late Tokugawa shogunate. This was built by Momokawa, a restaurant near the current YUITO building in front of Fukutoku Shrine in Ukiyoshoji. When this restaurant arrived in Perry, he was entrusted with cooking.

And kamaboko comes out as a souvenir, right? It's also written here as Okamaboko."

"In the Edo period, there were only three types of kamaboko, half-pan and white bamboo rings.

At that time, it was a good craftsman, a damonoshi, and a damonoya. It was divided into these two.

Goodsmen boil or fry in oil, and fry in oil in the late Edo period. Now that you can get a lot of rapeseed oil, you can use oil for food, and in the Nihonbashi fish market here, you can make something like Satsumaage by crushing surplus fish.

So, the superiors only make white ones, half-pan, kamaboko, and white bamboo rings.

It comes out in the rakugo "Tokisoba" and has a bamboo ring, but it says "There are a lot of misunderstandings recently" and "That is" Fu "What is it?" But that's a chikuwabun. Chikuwabu still remains, but the real white bamboo ring is gone. There's no place to make it. I used to make it until I was a child."

"There are some old articles left, but only Kamaboko, white bamboo rings and half-pandem. The spine was made later, but it was wasteful to throw it away, so it didn't waste it quite a bit."

"The essay of Junichiro Tanizaki (born in Nihonbashi) 'childhood' comes out a little about this god Shigeru.

"Shigeru'suji is better than a greengrocer." I don't have much praise."

When actor Masanobu Katsumura went around Nihonbashi on TBS's program "Pantankokan Kan" broadcast in August 2012, my mother also came out with the shop.

Katsumura's father was a craftsman of Tsukudani's Funasa. I've met my father, too. So even after the recording of our shop, "What surprised you when Mr. Katsumura left Funasa's shop? "The answer was that my mother reappeared in the question."

"Because it was a purveyor of the Imperial Household, there was an order from the Imperial Family.

I'll get in touch through a department store.

And what would you like to pay? If you make a mistake, you will be in trouble. I'd like to bring the goods before the opening of the store.

There was also an order for Kamaboko under the name of Emperor Showa. ・・・

You shouldn't have an order from the other party. It's different from offerings."

・・Mr. Inoue, thank you very much for your valuable stories.
