It's a new release.

A refreshing koshi bean paste containing the rich umami of Setouchi "Amabito no Moshio" is wrapped in a soft baked skin.

What is algae salt?

Salt made using seaweed such as Hondawara, which was once called Tamamo.

There is no horn in the spiciness of salt and it is mild to mouth.

 

 

The above two items will be sold until the end of August. In September, "Chestnut Castella" and "Chestnut Mikasayama" will appear.

Mt. Kogane Mikasa

Moist dough with good sweetness.

The color is also bright yellow.

In fact, it is said that eggs with a stronger yellowish color than ordinary eggs are used.

In addition, wasanbon sugar is used for this skin itself.

The bean paste is a fresh Tokachi large red bean paste, rich flavor.

This dough and bean paste mariage is excellent.

Throat

Kei Nishikori from Shimane Prefecture, is a famous story that when he returned from abroad, he answered "throat" as "What he wants to eat now".

Originally, it is a fish named "Akamutsu", but it is also known as "Nodoguro" as a high-class fish.

It's true that the back of the mouth is black.

If you dry it overnight, bake it and put it on a plate ... it's irresistible.

Ago noyaki (Agonoyaki)

It's regional cuisine in San'in district.

A chin that goes north in the Sea of Japan for spawning.

This is made into surimi, seasoned with sake or mirin, kneaded to a stick and baked.

The chin has a pale taste without habit, but the soup comes out.

"Achin no Yaki" is similar to a chikuwa, but this is generally larger.

The origin of the name "Noyaki" is related to its size.

In the past, it was baked on an indoor charcoal fire, but because of its size, it closed to smoke and began to bake at eaves and outdoors.

That's why "Noyaki".

By the way, "chin" is so delicious that the chin falls.

If you cut it and put it on a plate, it will be a dish, but it is also recommended to eat it as it is.

It is Koshihikari from Okuizumo-cho, Nita-gun, Shimane Prefecture.

According to the Japan Grain Inspection Association's Rice Taste Ranking (FY2015), it is said to be "Special A", and therefore "East Uonuma Koshihikari, West Nita United States".

Rice grown in Tanada in the mountains of the Chugoku Mountains is stored at low temperatures with rice husks as it is harvested, so to speak, "living rice".

This fresh Nita rice is hushed and milled immediately before shipment and lined up in the shop.

Care must be taken to preserve it, but you can keep it delicious.

It is said that Naomasa Matsudaira (a grandchild of Ieyasu Tokugawa), who inherited the trace of the Kyogoku family and entered Japan from Matsumoto, a country of Shinano, brought in the culture of soba from Shinano.

Izumo soba, along with Wanko soba and Togakushi soba, is considered to be one of the three major soba noodles.

Because it uses the ground buckwheat flour of Gensoba, it is characterized by its dark color and high aroma.

Rutin is also abundant.

Compared to the whitish and elegant soba of Edo and Shinshu, it is rough and men-like soba.

The koshi is also strong and the flavor stands out.

Izumo soba has "Warigo soba" and "Kamaage soba".

Each has its own unique way of eating in Izumo style.

Wariko soba usually comes out in three-tiered lacquerware (wariko).

Wakakusa

In the first place, the roots of Matsue's Japanese sweets are feudal lord, the seventh generation of the Matsue clan, Harusato Matsudaira (Fumai).

It is reported that the first generation of Saiundo was reprinted in the middle of the Meiji era, a confectionery called "Wakakusa" used in the tea ceremony, which was also famous as a tea master.

This sweet is famous for those who have knowledge of tea ceremony.
