It's delicious every day!　"Soba Yoshi" soba

Soba Yoshi, a soba shop directly managed by a bonito wholesaler, is a standing-eat soba shop run by Nakaya Shoten, a long-established bonito wholesaler founded in the Edo period. Although it is a genre called stand-up soba, chairs are actually placed. In addition to the Nihonbashi Main Store and Kyobashi Store in Chuo-ku, there are also branches in Kamiyacho, Minato-ku. We asked President Yamazaki, the thirteenth generation of the bonito wholesaler, who runs Soba Yoshi, to observe the bonito shaving at Nihonbashi Main Store, and we were able to hear the story.
