History of Ginza Bakery
Ginza Bakery is a baked confectionery store related to Ginbis, a confectionery company known for its "Tabekko Animals" and "Asparagus Biscuit".
With a shop in Ginza 1-chome, we are developing three products: "G Stick", "Castella Biscuit Sand", and "Rare's" that make use of biscuit manufacturing technology.
Back in 1930, founded in Sumida-ku as "Miyamoto Confectionery".
In 1945, while running a restaurant on Chuo-dori in Ginza under the name of "Ginza Bakery", he sold bread and sweets at stores.
But when the demand for sweets increases, it makes a happy scream that production can't keep up.
Here, the company name was changed to "Ginvis" in 1974 due to its commitment to "Ginza" and "Biscuit", which were founded.
We moved our headquarters to Nihonbashihamacho and started producing sweets at our Central Factory in Furukawa City, Ibaraki Prefecture.
Furthermore, in 2013, he established a separate company under the name of the nostalgic "Ginza Bakery".
I returned to Ginza and started store sales.
Taking advantage of the biscuit manufacturing technology cultivated so far, the idea of "let's make something that can only be made by ourselves" is fundamental, so even in Ginza, where the competition of baked confectionery stores is intense, macaroons and financiers are dared to compete with 3 products without making.
It is a company or shop that has a stronger desire for biscuit manufacturing than anyone else.
How is it different from "asparagus biscuit"? The secret story of the development of G Stick
As mentioned above, Ginza Bakery offers 3 products, but the long-selling since the opening of the store is the stick type biscuit "G Stick" bearing G in Ginza (Ginza).
There are three types of taste: cicasami, green soybeans, and vegetables, and it is also certified as a "Chuo-ku recommended souvenir".
Ginbis is famous for its "asparagus biscuits" (150 yen range), which was released in 1968 and won the Mond Selection Gold Award in 1975, and has been loved for three generations.
What are the characteristics of "G Stick" (631 yen including tax), which looks a little longer than "Asparagus biscuits", which is really similar to "G Stick" (631 yen including tax)?
According to Mr. Maruyama, the semiscissors of "G Stick" are hard to the texture of "asparagus biscuits" at the beginning of its release, and the more you chew, the more you taste.
The current "asparagus biscuits" are made slightly soft while adapting to the times, and the difference between the two is obvious at a glance when looking at the cross section.
The lower right side of the photo is the "G Stick" cscissors, and the right side is the "Asparagus biscuits", indicating the difference in the fineness of the eyes and the degree of baking.
Upper right: (top) G Stick Sesame (bottom) Asparagus biscuits
Lower right: (left) G Stick Scissors (right) Asparagus biscuits
In addition, the semiscissors of "G Stick" are baked tightly, so you can taste the umami of the biscuit itself, and the aroma is impressive.
While "Asparagus biscuits" boasts stable popularity, the background behind the launch of "G Stick" is that we wanted to sell baked goods that can feel the original taste and texture of biscuits more strongly, and from the viewpoint of dietary education, I felt the importance of chewing.
This "G stick" is a product born from returning to the motto "Contributing to eating habits with sincerity" that Ginbis advocated at the time of its founding, reviving the old-fashioned taste and making it a firm finish with increased chewing times.
In addition, the green soybeans and vegetables of "G Stick" are made using potato starch, so you can enjoy a more crisp texture.
Edamame contains blue soybeans and cheese, and vegetables are rich in potatoes, tomatoes, parsley, pumpkins, red peppers, green peas, spinach, cheese and vegetables.
In each case, the assertion that the scent and taste of the vegetables is slightly left is modest, so even children who like and dislike vegetables may be able to enjoy it without having a good feeling.
In addition, it is healthy because it is baked without frying. It is a gem filled with the history and wisdom of Ginza bakery that can be enjoyed regardless of men and women of all ages.
Reason why "G Stick" becomes a special souvenir
While Ginbis "Asparagus biscuits" can be purchased cheaply and easily at supermarkets and convenience stores around you, why is "G stick" selected as a souvenir?
There was a great reason there.
That's because it can only be purchased at the Ginza bakery store in Ginza 1-chome!
"G Stick" made by baking is easy to crack and delicate sweets.
If you're lucky, you can purchase it at a department store event, but you can also use charter flights when transporting it to that point.
Most of them are now available online, but it is also true that many gourmets visit in search of things that can only be purchased locally.
We plan to exhibit at events all over Japan from July 6th. If you live outside Tokyo, don't miss this opportunity!
Personally, when choosing souvenirs while traveling, I have two points that the name of the destination is included in the product name and package, and that can only be purchased locally (those not handled at the online shop).
If you know which souvenir is from the product name etc., a conversation will be born from it, and why not be happy if it is a valuable souvenir that can only be purchased locally because it is a convenient era?
However, there is a rare souvenir that says, "You can only buy locally = don't last for a long time."
Certainly, it is difficult to make raw sweets and foods that emphasize freshness as souvenirs.
But Ginza Bakery's "G Stick" has a long shelf life of 4 months from the manufacture, and it also has a rare feeling that you can not buy it by mail order!
It will be a perfect Ginza souvenir if it is a distance that can be carried with care not to ship and crack.
The possibilities are infinite! How to taste "G Stick"
The G Stick, which has three types of cicasami, green soybeans, and vegetables, is easy to eat with one hand and can be enjoyed by people of all ages regardless of the season.
In addition, as introduced on the Chuo-ku recommended souvenir page, it is also compatible with beer and wine.
I was worried about that, so I tried to make beer and wine tidbits, coffee and tea.
It's a personal impression, but beer is perfect with moderate saltiness and edamame with beans flavor.
Red wine is especially good with cicasami and vegetables, but if you want to choose one for a force, it contains cheese and vegetables that look like cheddar cheese are recommended.
The bitter coffee and the refreshing straight black tea have the sweetest of the three types.
Of course, each person has its own taste, so why not enjoy drinking and tea while comparing three types of eating?
In addition, as with "asparagus biscuits", "G stick" is also covered with salt.
In the coming season, it will provide salt supplement to prevent heat stroke and also provide calcium and dietary fiber.
I sometimes run long distances by bicycle, so I thought that the "G stick" in a solid cylindrical container was easy to carry and would be good for replenishment during cycling.
In addition, when combined with vanilla ice, moderate saltiness tightens the taste and quickly turns into a summer home dessert!
In this way, the way to taste and enjoy "G stick" is truly infinite.
Please look for your favorite combination.♪
Ginza Bakery's "Delicious Three Gunter" (product introduction)
Now that we have fully conveyed the charm of "G Stick", we will introduce the remaining two products of Ginza Bakery, "Casterra Biscuit Sand" and "Rare's".
Castella Biscuit Sand, a sweet with fresh cream sandwiched between castella biscuits, is available in three types: rum raisin, chocolate dip, and plain.
Sands that look similar can be seen at supermarkets' ice corners and other stores, but the birth of this product had a deep episode.
The founder of the current Ginbis and Miyamoto Seika, the predecessor of Ginza Bakery, was actually a craftsman who made castella and Japanese sweets.
Although castella is sold on the rear car with castella, it is troubled that the moisture content is high and easily damaged.
Therefore, a long-lasting biscuit will be born, but this fabric with a nice touch of castella and biscuit is used for this castella biscuit sandwich.
Is the biscuit thick and moist from the photo at the bottom right?
We use pure fresh cream from Hokkaido so that fresh cream does not scatter when eating, and manage it once equivalent to the chilled belt to keep it shape.
The fresh cream is fine and refreshing, and the fact that the softness of the castella biscuit part is even is packed with the extraordinary efforts of Ginza bakery craftsmen.
Since temperature control is such a delicate snack that is the key to deliciousness, it seems that it can be handled with dry ice up to 1 hour carrying time, but eat-in is definitely recommended.
It's not frozen like ice, so it's perfect for dessert all year round.
The lamb raisins I chose were, above all, large raisins and had a presence, adding a good accent to the fresh cream.
If you know the deliciousness of "Castella Biscuit Sand", which is sandwiched between fresh cream with an exquisite texture than ever before, you will not be able to return to other biscuit Sands!
On the other hand, the soft American cookies "Rairs" are available in 10 types: pineapple, maple chocolate, madamia nuts & raisins, butter almonds & caramel, oatmeal & raisins, madamia nuts & chocolate chunks, condensed milk & red beans, wall nuts & brownies, cheese & butter, chocolate chunks.
As you can see, macadamian nuts and walnuts are generously packed, increasing satisfaction.♪
Furthermore, the moment you open it, the rich aroma of brownies and the rich aroma of nuts and butter overflows, so you can feel happy before you actually eat it.
Since additives are not used as much as possible, the last shelf life is 14 days from the date of manufacture, and it is slightly shorter for cookies.
American cookies have been often seen at convenience stores for about five years, and I have eaten several times.
However, Ginza Bakery's "Rair's" is softer than those.
Having a cake-like texture, it moisturizes rather than crispy.
It is a "rare" product that cannot be imitated except for its "rare" texture reminiscent of life, and I am convinced that it is "the best of craftsmanship, the best of Ginza's stylish Sweets".
The store sells only three products, "G Stick", "Castella Biscuit Sand", and "Rare's", but it is more quality than quantity (number of products)!
Ginza Bakery's products that can be said to be "delicious three-guns" are only worth trying once.
Eat-in at a hideaway in Ginza
This time, I visited for coverage during the lunch break of work, but since there is only 30 minutes left until the start of the afternoon, sugar is replenishment with the rum raisins of "Castella biscuit sandwich" that I was worried about after seeing on Instagram!
There were 15 seats in the eat-in space on the second floor used this time, and the large windows were half vacant, so there was a sense of openness.
In addition, it faces Ginza Brick Street, a few lines away from Chuo-dori, so it has a calm atmosphere like a retreat, and it is a nice point to spend a relaxing time.
As you can see in the photo, in addition to the purchased products, we also had iced tea and tasting "G Stick Sesame".
At the store on the first floor, after taking measures against infectious diseases, tasting "G Stick Scissors" and "Rarees" will be conducted.
There are a number of similar products, but just looking at them doesn't tell the difference.
If you are considering purchasing them, we recommend that you talk to the shop and sample them.
Yeah
Through this interview, I was able to experience the application of skillful biscuit technology by Ginza Bakery, and realize the potential of biscuit and its original taste.
While there are many soft baked goods that take into account the shelf life and ease of eating, the "G Stick" that is delicious and healthy can be enjoyed regardless of season or age, so I would like to make it a souvenir option in the future.
When you come to Ginza, be sure to visit the Ginza Bakery store.
