There is a theory that Gennai Hiraga's idea originated in the idea of eating eel on the day of the ox.
It is said that the eel season from autumn to winter is the season of eel, but I feel like I eat only in summer.
I feel that summer batter will be resolved if I eat it, so I don't have to feel that I'm being deceived, but it's probably better to be deceived comfortably.

Eel itself seems to have been eaten since the Jomon period, but it is said that kabayaki began to be eaten in the Muromachi period.
At that time, eels were cooked in tube-yaki (like skewers), and their appearance resembled the ears of kaba, so they came to be called Kabayaki.
Later, during the Edo period, there were many eels in the wetlands of the reclaimed land of Edo, so it seems that they could be eaten favorably in Edo. Due to this trend, there may be many long-established eel shops around Nihonbashi.

By the way, eels are open back. The reason is that in the samurai culture of the Edo period, there is a theory that the belly opening of the eel became a backward because it resembles an incision. However, I looked a little bit about "What other fish?"
To summarize some theories, Kabayaki in Kanto steams eels and bakes them, so steaming removes oil and softens the body, and if you do not stab the skewers in the thick part, the body will collapse. It seems like that. In Kansai, it seems to have a stomach opening like other fish because it is baked without steaming.

Regarding the origin of Unadon, the anecdote of Imasuke Okubo, a play in Nihonbashi Sakaimachi, the current Chuo Ward, is famous.
Eel kabayaki steamed in rice and rice soaked in sauce are the best!

At least for the memorial service, I visited the eel mound in the precincts of Gwangmyeong Inari next to Jisshi Park.

By the way, in addition to the purpose of memorializing like this, the word eel mound uses the property of hiding in narrow areas of eels to accumulate stones at the bottom of the river and catch eel descending the river in autumn It seems to refer to. Isn't it a bit interesting to memorialize the eel caught at the eel mound at the eel mound?

At the bottom of this eel mound, the name of the Nihonbashi Kamayaki Merchant's store is engraved (in the photo in the title), but there are many shops that I couldn't go around today.
I want to visit every store someday!
