Long-established soba shop "Yabu Izu Sohonten"

This time, we visited a long-established soba shop in the Kyobashi and Nihonbashi areas. I would like to introduce "Yabu Izu Sohonten".
"Izumoto" from Kyobashi, which is said to have been the oldest in Edo, was included in the goodwill of "Kanda Yabu Soba" and reappeared as "Yabu Izu" in 1882. It is a long-established soba shop that has been around for 137 years while moving its location to the current location of Nihonbashi in 1996.
The shop is located on the street running in parallel with the previously flowing “Momijigawa” digging (the Kaedegawa is currently reclaimed and the Metropolitan Expressway runs above). It is a quiet location. I found a stone monument in the left corner of Mr. Yabu Izu's fine gate, which feels a little high. It is engraved as "Nihonbashi Edo Momiji-dori". Apparently, it looks like a stone monument built when the shop was moved to this area.
What is reminiscent of "Kanda Yabu" is the singing tone of a landlady who greets you at the bookstore. As soon as you pass through the curtain and enter the store, "I'm here", "New ~, one person ~". Isn't this exactly the same as the tone of the landlady who orders at that board in Kanda Yabusoba!

It is said that during its peak, there were 4,000 soba shops in Edo, several times that of food stalls. As the food culture changes with the times, the essence of soba shops does not seem to have changed much. The basis of this is the salty soup that the men who created the Edo (manual workers) prefer, and the "smart" of the common people can be seen and hidden in the cheap and unpredictable soba cut.
Yabu Izu Sohonten is also a soba shop that continues to carefully preserve the taste and culture loved by such Edo children. Of course, not only the commitment to buckwheat flour, but also the points that cannot be removed, such as "clear arrangement with water" and "broth taken with 6 kinds of shaved knots".

On this day, I asked for "Tenseiro" (1300 yen). The good thing about the water drained soba that is filled with the information! The second tier soba has more water coming out of the surface, so you can feel the scent of soba more strongly.
It was in the middle of Golden Week, so it was said that the usual lunch menu was not served, but Yabu Izu's lunch menu (see figure below) seems to be the best Costa. I really want to eat next time.

The predecessor (fifth generation) master started "Rakugokai".
