Looking back on last year, I think that the ease of visit and coffee lovers were giving a lot of cafe information, but I would like to introduce a wonderful cafe in the first post this year.

This time, I would like to introduce the coffee stand "CASTOR", which opened in Nihonbashi Honmachi last year.

Isn't there some people from Chuo-ku Dori who feel nostalgic for the store name Cas Thor and the illustrations of the sea otters on the signboard?

In fact, the predecessor of this restaurant was a French restaurant of the same name that had been set up in Kyobashi 2-chome (around the opposite side of Kyobashi Kuminkan) until 2015. After moving to Minamiaoyama, in August last year, we opened a new store near Kodemmacho Station on the west side of Jushi Square.

Kenji Fujino, a French chef who also showed his skills in Kyobashi, Kako Fujino, a cooking researcher focusing on home cooking, and Takako Fujino, a confectionery researcher who is two daughters, are cooking classes in their respective fields. We hold.

The coffee stand seems to be mainly operated by Takako, and the counter is lined with French-made croissants and baked goods, which are lined up according to the season and the mood of the day.

Coffee is purchased from different roasters every month, and in January and February we offer beans from Symington Coffee Roasters, an unstored roaster in Noto, Ishikawa Prefecture.

I chose croissant to accompany coffee.

I felt that the size was a little larger than what I usually see, but the balance between the crisp feeling of the outside and the tight feeling of the inside is exquisite.

It was a gem that I wanted to eat on a daily basis without decorating enough to think that I could eat as many as I could (except that I was eating).

The spacious kitchen studio behind the store space is used for various cooking classes held according to the season and season, as well as for shooting cooking-related books.

"Miso no Kai" is being held in January and February. When it comes to making miso, some people may imagine something like an "experience classroom", but here is a classroom where you can make miso in a practical form, such as making the amount that can be used at home at once throughout the year. You.

If you prepare miso during this cold winter season, you will be able to eat it from summer.
