We will introduce a demonstration corner where you can enjoy eating art and kneaded raw confectionery, and enjoy it with matcha. It seems that there are foreigners trying to take home without eating it for that wonderful finish, but it's a raw confectionery.
Tsuruya Yoshinobu is a long-established Japanese confectionery shop located on the first floor of Cored Muromachi 3, a few minutes walk from Edo Nihonbashi. If you look inside from the street, you can see the counter in the back. That is the demonstration "Kayuchaya". The 6-seat counter is often crowded, so if you are vacant, you will be lucky (you cannot make a reservation).
Kneading is a confectionery made by adding ingredients such as fertilizer, Tsukune potatoes, and yam to white bean paste. It is a traditional confectionery that expresses the changing seasons. It was designated as Intangible Cultural Property by the Agency for Cultural Affairs in 2022.
The bean paste is prepared in two parts to add the gradation of the center of the cherry blossoms. At the same time, rounded, petals were attached, and the last flower core was presented in front of me so that I could see it well (the photo was pear because I was expressive).
It was born in the late Edo period. It is said that it is "kneading" because it is mixed with white bean paste and kneading and kneading. 1430 yen with matcha and green tea added to one snack.
