We will hold an event "SHOKUIKI" to taste the "food" of Tokyo in "smart"! The theme this time is "Edo Vegetables". Vegetables that have been eaten since the Edo period are offered in the original menu.
The first one is the SHOKUIKI original sukiyaki course of the "private room Kaiseki Kitaoji Kyobashi Tea House" on the 5th floor of the Kyobashi Edgranaus Building from October 16 to 31. We have participated in the tasting of the prototype menu, so we will introduce it.
Edgran, directly connected to Kyobashi Station, is within walking distance of Ginza and Tokyo Station. Kitaoji, a private room in all rooms, is a shop with a relaxed and calm atmosphere. Since full-fledged kaiseki can be enjoyed at reasonable prices, I wanted to use it for family celebrations and women's associations. Even two people will use a private room, so I would be glad if you could bring them on a date.
The main one is Japanese black beef and Edo vegetable sukiyaki. Mr. Oya, the deputy chef, demonstrated and cooked. At the time of delivery, we plan to prepare one by one in a small pot. It is said that meat has a rare taste. The sweet fat unique to Wagyu melts in your mouth.
The used Edo vegetables may vary depending on the purchase situation, but on this day we also received spring chrysanthemums and burdock from Tokyo. Edo vegetables are particular about from Tokyo, and Mr. Oya himself visited the farmers and chose them. In fact, Kyobashi was also the place where the fruit and vegetable market, which sells fresh vegetables to citizens, was located in the Edo period, called Kyobashi Daikon Riverside Vegetable Market. While thinking about the Edo period, the Edo vegetables you get in Kyobashi are "Iki"!
There are two types of small bowls made with Edo vegetables.
The first is Komatsuna tofu. Komatsuna is a representative vegetable of Edo, which is said to have been named by the 8th Shogun Yoshimune. Kuzu tofu, which is made with grounded komatsuna, has a firm and soft texture, and is perfect for the thick bean paste. Vegetables from Tokyo are also used for matching.
The other is "Tosa Tofu's green onion tailoring". Tofu fried with bonito flakes, tuna and Senju green onions are combined. Negima-nabe, which is made by boiling tuna and green onions with soy sauce, is a taste of common people born in Edo and is certified by the Ministry of Agriculture, Forestry and Fisheries as a regional cuisine in Tokyo.
One of the items will be used for the small bowl. I like fried tofu, so Tosa tofu was a very favorite taste, but I can't throw away Komatsuna tofu, which is colorful and beautiful, looks like it, I'm looking forward to seeing which one will be on the menu!
In addition, Kitaoji, who was disturbed this time, many people who use it for entertainment etc. are recommended to make a reservation when using it.
"SHOKUIKI Sukiyaki Course" is limited to weekday dinner only, and reservations must be made at least 2 days before use. If you are interested, please make a reservation as soon as possible.
