In the past, a small bistro-style shop was transformed into a sushi restaurant called "Sushi Shiba" in June. I thought that a sushi restaurant had a high threshold, but I couldn't help but worry about it, so I decided to call out during the daytime preparation. A small space with 8 seats only at the counter. Nearly three hours passed quickly with a fun exchange through cooking with a single owner chef who manages everything.

Chef Shiba has been trained at sushi restaurants in Ginza and Meguro for 24 years since the age of 20, but this is the first owner chef to open a business. What is interesting about Shiba's career is that he was trained at a French shop for the first three years. He did not change jobs from French to sushi, but had a long-term strategy that the French experience would be useful for sushi. However, please be assured that tuna is not on top of French bread.
