The “ALL JAPAN Natural Cheese Contest” hosted by the Central Dairy Conference is held once every two years. More than 250 cheeses are exhibited from all over the country, and this is a contest that determines the top of domestic natural cheese. The only producer from Chuo-ku exhibited at the 14th contest held in October 2023 is "Cucina del NABUCCO".

"Cucina del NABUCCO" is not a cheese specialty store, but an Italian restaurant in Ginza. It is unusual for a restaurant to exhibit in a contest, not a cheese trader. Cheese is handmade in the store in Ginza 2-chome. At the tasting party after the contest, we received the cheese exhibited by Cucchina delnabucco. The delicious thing of fresh cheese made with fresh Hida milk! Cheese can be eaten at the restaurant, but can also be purchased at the store. I wanted to eat and compare various cheeses, so I bought four kinds of mozzarella cheese, ricotta cheese, mozzarella Afmikata, and melting seasonal fruit Butta. We had a cheese party at home.

Melting Seasonal Fruit Budata (limited sale)

The author's recommendation is "Tollowing Seasonal Fruit Budata". The one with fresh cream and finely chopped mozzarella in the mozzarella cheese is Budata. The melting seasonal fruit butta contains more seasonal fruits. This is a really wonderful taste! The sweetness and sourness of fruits match the cheese and the best. The drawstring-shaped form is also cute. At the tasting party after the contest, we received Shine Muscat's Butlerta, which left a strong impression. One of the pleasures of this cheese is that the fruits used change depending on the season. The fruit at the time of purchase was "fig". I make a combination of mozzarella cheese and fruits by myself, but the melting seasonal fruit butrata has a sense of unity between fruits and cheese, making it a taste that cannot be served by individuals. Budata, which uses various fruits such as strawberries and mangoes, seems to have appeared in the past, so I would like to buy it again in a different season.

Motsarella cheese (850 yen)

It is a smooth mouthfeel, not too hard, not too soft, just a good texture, a milky feeling when chewed, and a dish that I felt again that "Motsarella cheese is so delicious!" It is good to taste it simply with salt and olive oil as it is, but the milk flavor is solid, so when combined with tomatoes and fruits, the taste of cheese was more noticeable and delicious.

Licotta cheese (650 yen)

I am impressed by the sweetness of milk that spreads in your mouth. To learn about the deliciousness of fresh cheese, we recommend that you try this ricotta cheese first. Licotta cheese is often used for cooking and desserts in Italy, but to be honest, it was much more delicious than I had eaten in Italy. Using good milk, you can tell that it is carefully made.

Mozzarera Afmikata (900 yen)

The smoked mozzarella cheese is Mozzarera Afmikata. The water is drained out and it is firmer than ordinary mozzarella cheese. At first, the flavor of milk is strong, but the smoked smokedness gradually comes out and the lingering finish remains. If you bake a little, the smoked scent will come out firmly.

I'm glad that there is a shop in Ginza where you can always eat freshly made cheese! In recent years, domestic natural cheese has risen to the level of winning prizes in overseas contests. Cucchina delnabucco cheese has already won awards in domestic contests. Once you eat it, you will be impressed by the taste of natural cheese. In the coming season with many events, such as Christmas and New Year's holidays, why not add fresh cheese from "Cutchina Delnabucco" to the menu?
