In fiscal 2023, under the theme of "newly disseminating the best of Edo (Tokyo)", we collaborated with stores in the facility to develop original menus using Tokyo's traditional vegetable "Edo Tokyo Vegetables". This time, I heard that you can eat delicious dishes using Edo Tokyo vegetables at "Iwaen", a famous high-class Chinese restaurant with a history as the third installment, and fortunately participated in the tasting party. At the tasting party, chef Akira Kamiki talked about the ingredients used in cooking, the production area, and his passion for cooking. Mr. Kamiki originally specializes in Shanghai cuisine. He has experience of training at various Chinese restaurants. Among them, the work at "Summer Palace" is the longest.

Summer Palace opened in Osaka in 1955, when Chinese restaurants were still rare. Over its long history, it boasts essences such as Beijing, Guangdong, Shanghai, and Sichuan cuisine.

Steamed soup with a medicinal style

According to Mr. Kamiki, the ingredients of "Yakuzen-style steamed soup" are "daikon", "ginseng", "chicken peach", "white jellyfish", "Korean ginseng", "Shiitake", "Chinese ham", "dried scallop", "Hatomugi", "Ryugan" and "Figs" are good for body and skin. Soup made of steamed ingredients boiled for about an hour. The base of the soup stock is chicken and chicken. It is said that seasonal vegetables are added depending on the season. In the winter season, root vegetables such as radishes and carrots are delicious, so I put them in the soup. This soup comes with standard for lunch. Mr. Kamiki says that he is aiming for "Yakuzen-style soup" that can be eaten deliciously instead of "Yakuzen soup". If you keep drinking, you may be able to make your skin beautiful. 。

Add komatsuna with sticky water dumplings sesame sauce

Water dumplings are based on meat and shrimp. The skin is "sticky" than ordinary gyoza skin. The sauce is a spicy sauce mixed with sesame, sweet soy sauce (simmered soy sauce, sugar and sake), and pepper. Add pure salty komatsuna (Tokyo Edo vegetables from Edogawa-ku) to it, and chili pepper is made with paraparagus. This was also delicious!

The main dish is "Edo Vegetables and Kirishima Pork Chinese Pottof". Potofu, which is baked Kagoshima-grown Kirishima pork with licorice, lourier, and dried ginger. The ingredients are Nerima radish of Edo vegetables, Santona (a kind of Chinese cabbage), turnips and carrots. It seems that Shandongna is often used in China. At present, there are few places that produce Shandongna in Tokyo, so valuable vegetables that can only be received at this time. Kirishima pork is steamed and oil is out, so it is healthy and easy to eat. And it's very delicious!
