This time, I would like to talk about the history and origin of Mr. Funasa Nihonbashi.
Mr. Yu Miyauchi (Yuu Miyauchi, General Manager of Nihonbashi Funasa Co., Ltd.
Then...
Funasa Nihonbashi was founded in 1862 (Bunkyu 2), around the end of the Edo period.
Sakichi was originally a samurai. Hokushin Kazuto style, skill of licensing.
My hobby was fishing, and I sold the caught small crucian as a skewer, and sold it as "Funa Kotobuki Umeyaki" with soy sauce.
One day I set up a fishing boat and got into time. It was Tsukuda Island.
So I got hints that a local fisherman was salty and boiled small fish and sold it. It is said that the soy sauce boiled at this time created the prototype of the current Tsukudani.
Tsukudani came to attract attention in the battle between Nisshin and Russo.
Tsukudani, which was highly preserved, was regarded as a wartime food, so that soldiers after returning to Japan could buy Tsukudani.
The name of the shop is "Sayoshi of Funaya", which is the naming from there, but "Kinfunasa Tsukudani" is registered as a trademark.
It is derived from the memorial of Kanemori Ono (Kanemori), the third generation, who further devised the taste of the secrets inherited, and created Edo's specialty Tsukudani.
Funasa Nihonbashi, who has a reputation for Edo food, is now the fourth generation Ryuhei Miyauchi (Ryuhei), and the fifth generation Yu Miyauchi, are creating items such as Tsukudani.
By the way, Mr. Funasa Nihonbashi has been quoted in a rosmari article before.
It is "I will talk about the history of Mr. Shigeru Kami 2" uploaded on March 9, 2017.
