This time, I visited Eitaro Sohonbu in Nihonbashi.
In 1818 (1818), the Nihonbashi Main Store opened in 1855 (1855), starting with a stall at the base of Nihonbashi.
"I want to eat the kokintsuba of Samurai Ryuishi,"
Gintsuba, born in Kyoto, is made by baking bean paste with non-glutinous skin, but in Edo, when it was baked with non-glutinous flour, it became brown. Therefore, it was named "Kintsuba" because "gold is better than silver".
The stylishness of Edo kid is good!
The large, sweet and delicious "Kintsuba" became very popular with men working on the Nihonbashi Fish Bank.
Eitaro, who helped with the stalls from an early age, said that when setting up the store, he named the name "Eitaro" with appreciation to the people on the riverbank who loved me.
Plenty of bean paste is wrapped thinly in flour dough as far as the tip of a small finger, and is made using the traditional method.
