[Ginza 6-chome] Gorgonzola cheesecake LESOLCA (Resolca)
In this blog, articles that feel the sign of spring have become noticeable.
In the winter, some sort of ready-to-eat activities have started, but it's almost getting warmer.
By the way, regardless of the season around, I would like to introduce some unusual sweets today.
Relocated to Nishi-Gobangai Street
The shop to report this time is LESOLCA (Resolca) in Ginza 6-chome. It used to be on the 10th floor of another building nearby, but it moved to the 1st floor of the Koyurugi Building in January 2022. The appearance of a hideaway is wonderful. Nishigobangai-dori is a road between Namiki-dori St. and Suzuran-dori, parallel to Chuo-dori.
The unusual sweets are LESOLCA (Resolca) cheesecake. I'll introduce you right away.
The name is "luxury cheesecake"
Luxurious cheesecake 2,700 yen (tax included)
This is the rumored luxury cheesecake of Resolca. In addition to cream cheese, this cake uses blue cheese, and you can enjoy it with the attached honey.
These honey and secret salts are also carefully selected from the Mediterranean Sea.
The walnut-containing crumbles that cover the surface are like rag-shaped cookies, and the difference in texture from the smooth cake is a good accent.
When I cut it, Gorgonzola of blue cheese appeared and had a unique scent (top image). Fragrance which is not only sweet, but also increases expectations. I will try it while paying attention to the special ingredients.
Salt of Gozo Island (Malta)
The Republic of Malta is a small island country consisting of several islands floating in the Mediterranean Sea. Gozo Island is the second largest island after Malta, where the capital Valetta is located, making it a nature-rich resort where people living in Malta go by ferry on weekends and summer vacations.
Gozo Island (25 minutes by ferry from the northern end of Malta Island)
One of the specialty products of Gozo Island is salt, and you can see Shiota on the coast.
The salt of Gozo Island is made slowly and slowly by the traditional method. Resolca's luxury cheesecake toppings are sprinkled with salt from the island of Gozo along with crumbles. When I visited Gozo Island on a trip before, I didn't think I could meet sweets using Gozo Island salt in Chuo-ku. You often came to Ginza from the distant Mediterranean Sea.
Ramla Bay on Gozo Island called Ramlahamra (red sand) in local language. The contrast with the blue and clear Mediterranean Sea is wonderful.
About Gorgonzola
Gorgonzola is one of the world's three largest blue cheeses. The village of Gorgonzola, the origin of the name, is located in the inland part of northern Italy, in Milan, Lombardy. Gorgonzola, which is the closest of the blue mold cheese, is still rare to be in the cheesecake. The luxurious cheesecake with the rich and slightly bitter Gorgonzola flavor is a taste that has never been seen before (Omomuki). If you like alcohol, please try it with wine.
At the end, put on honey
After enjoying the taste as it is, the real pleasure of this cake is that it is waiting for a different taste by applying honey like pizza Quattro Formadge. It seems that the attached honey changes seasonally, and this time it was called "Kuri Bio Honey" in Campagna, Italy. Campagna is a southern state facing the Mediterranean Sea, whose capital is Naples, the birthplace of pizza. As described in the description, "Sweetness is modest and bitter", it went well with luxurious cheesecakes with honey with astringent taste and aroma that is comparable to Gorgonzola.
There are still many things I don't know in Chuo-ku, which is full of delicious food. Resolca is always named in the topic of "Delicious Cheese Cake in Tokyo". The selection of materials that feel the sense of travel is also a nice discovery. Sweets using blue cheese are impressive and may be seen at various shops in the future. Thank you very much for your attention.
