The other day, I had the opportunity to participate in an interesting attempt organized by an acquaintance.
It was to compare the eating of Canure, a traditional French baked confectionery, and brought in the reputation of Canure, both inside and outside Tokyo, and tasted with the name of the store down.

In fact, among the 18 canules, there was a jet-black canule that was particularly distinctive. Since the color, shape and size are different from other ones, it is meaningless to lie down the store name, and it is treated as a special frame when comparing eating. That was the Canure Cacao of SHIMIZU CHEF.LAB, a bakery in Tsukishima, Chuo-ku. It's a cacao flavor, so it was black.

Today, I would like to talk about the SHIMIZU CHEF.LAB.

Moved from Nakano-ku to Chuo-ku

SHIMIZU CHEF.LAB is a shop opened in Tsukishima after the Shimizu Chef Food Development Laboratory in Higashinakano relocated in April 2022.

It is located near Nishinakabashi, which stretches from Nishinaka-dori, known as Monja Street, and is a 5-minute walk from Kachidoki Station. Until about 20 years ago, there was a bowling alley called Tokyo Ace Lane near Tsukishima Sanchome. It's a recreational facility in the neighborhood, and it's a nostalgic place where I've played several times when I was young.

This is the SHIMIZU CHEF. LAB. The bread workshop is a store as it is.

As you can see, there is no entrance. At SHIMIZU CHEF.LAB, customers don't enter the shop, choose the bread they want to buy from the show window and tell the clerk. There was a person who pulled a stroller, but it seemed like a drive-through and easy to shop.

This is the one that sold more and more while I was wondering which one to choose. The clear salt content is outstanding! Salt butter the mand baked with almond cream with skin on this salt butter bread only on Saturdays and Sundays will also appear. That seems to be popular too.

Canelé cacao 430 yen

I'd like to introduce some of the rumors. Since the canure is a baked confectionery with egg yolk as the leading role, the cross section is generally yellow, but the main players of this canure cacao are cacao and cacaonib. The taste and appearance were like Gato Chocolat. It's a literally unique canale.

Angel's cheek is a signboard product of SHIMIZU CHEF.LAB. Additive-free bread that sticks to homemade natural yeast. The top image is just cut. It's fluffy and soft, and how delicious it is. "I wonder if bread was a drink?" There was a strong feeling even when I toasted.

Angel's cheek French bread 500 yen

I'm sorry I have already cut it. The picture is for 2 pieces. I was accompanied by a meal when I was feasted at an acquaintance's house. All of them grew naturally into bread. The food and bread were delicious, and it was a nice synergistic effect.

SHIMIZU CHEF.LAB has often appeared in various parts of Tokyo as pop-up stores. In early last month, we opened a store at Nihonbashi Takashimaya S.C. Don't miss it when you meet in an unexpected place.

There are delicious bakery shops in every city in Chuo-ku. It's best to buy daily bread at a bakery in the neighborhood. But sometimes I thought it would be a good idea to visit a bakery in a distant city. It was a very satisfying holiday to meet delicious discoveries and nostalgia in Tsukishima. On the morning of summer vacation when you can afford a little more than usual, why don't you extend your legs to a different bakery in the city?
