As part of the dissemination of sake, Hakutsuru Sake Brewery has been working on the cultivation of Hakutsuru Ginza Tenku Farm as a project to make sake rice on the roof of the Tokyo branch building since 2007, and has been working on the cultivation of its own developed rice `` Hakutsuru Nishiki '' .
Sake made from "Ginza Sake Rice" grown here, and it is commercialized.
Last year's rice was also Junmai daiginjo sake "Shirazuru Shoun Junmai Daiginjo Ginza Tenku Farm Hakuzuru Nishiki".
This year, Hakutsuru Nishiki, the United States, debuted in 2023 due to rice planting on May 24.

Sakamai refers to rice that is used as a raw material for sake.
Shiratsuru Sake Brewery is for the development of excellent sake rice. We started breeding "Hakutsuru Nishiki" with the aim of elucidating the excellent characteristics of "Yamada Nishiki", the best varieties of sake rice, and developing even better sake rice.
In 1995, we started crossing the breed "Wataribune", the father of "Yamada Nishiki", and the mother "Yamadabo", and the breed was registered as "Hakutsuru Nishiki" in 2007.
Rosmari has been introducing rice planting and rice harvesting at Tenku Farm continuously since rice harvesting in 2017.
This year's sky farm had rice planting about three weeks earlier than usual.
The reason for this is to “increase sunshine hours.”
Shussui is one week earlier than last year, and rice harvesting is several days earlier than usual.
They seem to have had enough sunshine hours.
On October 17th, the long-awaited rice harvesting was carried out.
The weather is fine, the wind hardly blows, and it is a perfect rice harvesting day.
Approximately 30 employees of Shiratsuru Sake Brewery participated in the rice harvesting work on the day.
Before starting rice harvesting, the work procedure of rice harvesting was explained.
① Hold a sickle with a hand, and grab the rice stem with a hand opposite to the hand.
At that time, make sure that the thumb of the hand with the stem is facing upward.
If you disagree, if you notice it, you will say "I don't have a thumb!", So be sure to cut your thumb upwards because it is very dangerous.
② Normally, rice harvesting is cut from 1cm to 3cm from the ground, but this time, after leaving about one genkotsu, the jagged part of the sickle is pressed and the stem is pressed at 5cm to 10cm from the ground. Slide on it diagonally and cut it.
At this time, I think you want to make it a gig like a saw, but instead, slide it and cut it with a sharp cut.
We have to pull out the remaining stocks, so please leave them as long as possible.
③ With the harvested rice, we will continue to mow about 5 to 6 plants until we can no longer hold it in hand.
If you can't have it, I think there is a staff nearby who can tie rice, so please give it to them.
④ Place the harvested rice on the deck of the side tree or on the stone at the end of the rice field so that the ears do not fall into the soil.
⑤ The rice harvested from 5 to 6 shares is tied twice with a string as a bundle.
At this time, a butterfly tie is fine, but if possible, I want you to keep this off, so it is okay to tie it up.
In that case, if weeds enter the bundle, they will be removed later, so if weeds are in it, remove them and tie them.
⑥ Please work separately for those who cut rice with a sickle and those who bundle with strings.
It is difficult to continue in the same position all the time, so please take turns within the team as appropriate.
While watching the surroundings carefully, please work slowly because it is fine.

After 10:00 am, I went up to the roof of the building and started rice harvesting for 17 years.
This year's special guests, 2023 Miss SAKE Akita Takahashi Rin and 2023 Miss SAKE Fukuoka Otani Shiori entered the rice field with Shiratsuru Sake Brewery employees and harvested rice.
With the policy setting of "do not spill any grain and do not waste", a small amount of rice is valued in poly buckets in this way.
Rice is gradually harvested and put together in bundles with strings.
As shown at the right and rear of the image above, the cut rice is hung on the drying stage.
At a later date, the rice harvesting is over, leaving the rice harvesting fields for elementary school students.

But I still have a little more time, than usual.
ー In fact, it would have been better for rice harvesting if the rain was not on the rice field or dry.
