Shiratsuru Sake Brewery Co., Ltd., headquartered in Kobe, Tokyo branch office building is located in Ginza.
As part of disseminating sake, Hakutsuru Sake Brewery has created "Hakutsuru Ginza Tenku Farm" as a project to make sake rice on the roof of the Tokyo branch office building since 2007, and cultivated its own developed rice "Hakutsuru Nishiki". I am working on it.
Sake made from "Ginza Sake Rice" grown here is commercialized.
Last year's rice was also Junmai daiginjo sake "Hakuzuru Shoun Junmai Daiginjo Ginza Tenku Farm Hakuzuru Nishiki".
Last year's rice harvesting at this Tenku Farm was held on October 17th.

What is the growth of rice this year?
On August 24, the 91st day after the rice planting, we confirmed the heading.
The heading itself is about the same as last year.
-You have already finished the "medium drying" of temporarily draining the water in the field, right? What's the difference?
(The water in the danbo is always in the water, so dry the soil to remove gas in the soil. That's mid-dried.
By removing gas, oxygen is sent to strengthen the roots, and by draining water, it also plays a role in stopping growth and preventing the stem from growing too much. )
It was dried in the middle at an early stage just before heading.
I'm worried about a typhoon in the coming season. It's coming a lot (typhoon eggs) now.
At the stage before applying the bird net, Typhoon No. 10 came the other day, so I fixed it with a rope for the time being to prevent the rice from falling down.
ー Is the rice harvesting schedule similar to last year?
The rice harvesting season is expected to be around the same time as last year, but since the growth is still slow, the ears have not come out (all over), so I can't say anything.
How about anti-insect measures?
There were some insects this year. "Insect house" was made. I'll get rid of it as soon as I find it.
Last year's rice was too good, so I'm worried about it.
(Rice) I thought it would grow even if I left it alone, but there was no such thing.
-You have such an image of the school's "bucket rice", so if you think you can easily grow it, it's not such a sweet thing.
