This time, we introduce the rice harvesting of "Hakuzuru Ginza Tenku Farm" on the roof of this Ginza building.
As part of disseminating sake, Hakutsuru Sake Brewery has created "Hakutsuru Ginza Tenku Farm" as a project to make sake rice on the roof of the Tokyo branch office building since 2007, and cultivated its own developed rice "Hakutsuru Nishiki". I am working on it.
Sake made from "Ginza Sake Rice" grown here is commercialized.
Last year's rice was also Junmai Ginjo sake "Hakuzuru Shoun Junmai Daiginjo Ginza Tenku Farm Hakuzuru Nishiki".
This year, due to rice planting on May 24, the United States, Shiratsuru Nishiki, debuted in 2024.

Sake rice (Sakamai) is rice that is the raw material of sake.
Shiratsuru Sake Brewery started breeding Hakutsuru Nishiki with the aim of elucidating the excellent characteristics of Yamada Nishiki, the best varieties of sake rice, and developing even better sake rice.
In 1995, we started crossing the varieties "Wataribune", the father of Yamada Nishiki, and the mother "Yamadabo", and the excellent varieties were registered as "Hakutsuru Nishiki" in 2007.
Rosemari has been introducing rice planting and rice harvesting at Hakutsuru Ginza Tenku Farm since the rice harvesting in 2017.
This year, on October 30, the long-awaited rice harvesting was carried out.
Last year's rice harvesting was October 17, so we waited for about half a month from last year before harvesting rice.
The weather is cloudy and there is no wind.
Approximately 30 employees of Hakutsuru Sake Brewery participated in the rice harvesting work on the day.
Before starting rice harvesting, the work procedure for rice harvesting was explained.
① Hold the sickle with a handy hand and grab the rice stem with a hand opposite to the hand.
At that time, make sure that the thumb of the hand holding the stem is facing upward.
If you disagree, you may cut your thumb, so be sure to cut your thumb upward because it is very dangerous.
② Normally, rice harvesting is cut at 1 to 3 cm from the ground, but this time when I left about one genko, I pressed the jagged part of the sickle on the stem at about 5 to 10 cm from the ground. And slide it diagonally to cut it.
③ With the harvested rice, we will continue to cut it for about 5 to 6 shares until we can no longer hold it.
If you can't have it, I think there is a staff member who can tie the rice nearby, so please give it to you.
④ Place the harvested rice on a side wooden deck or on a stone at the edge of the rice field so that the ears do not touch the soil.
⑤ The rice harvested from 5 to 6 strains is tied together with a string as one bundle.
At this time, a butterfly knot is fine, but if possible, I want you to keep this out, so it is okay to tighten it.
In that case, if weeds enter the bunch, they will be removed later, so if weeds are in, remove them and tie them.
⑥ Work separately for those who cut rice with a sickle and those who bundle them with strings.
It is difficult to continue in the same position all the time, so please take turns in the team as appropriate.

There were a lot of weeds this year, and it was quite difficult.
But insects and weeds manage to deal with them and get rid of them when they find them.

Do you have any other difficulties?
There was a lot of rain this year, so I didn't have to worry about it.
Normally, I add water, but it wasn't like I had to be careful because it dries.
It was a lot of rain, it was hard, that was a concern.
ーAnd today, we cut the rice and make effective use of the sunny days in the afternoon to make a rice rack.

I feel that there is still a lot of trouble in the first half.

After the rice planting, it rained and the seedlings were quite crushed, but it was like trying to revive it again.
We have to examine what is the cause of the hardship in the first half.
For next year, this year we struggle in many ways, devise, and dragging that the feeling is a bit okay.
