This blog introduces many good soba shops in Chuo-ku.
This time, I visited Tsukiji Sarashina no Sato in front of Tsukiji Station.

In fact, a long-established soba restaurant located in Tsukiji, a fierce battlefield for soba.
When it comes to having many soba shops, I think many people imagine Kanda or Nihonbashi.
In fact, Tsukiji is also a fierce battlefield for soba, and there are many soba shops, ranging from long-established stores to up-and-coming new stores.
If you think about it, it should be.
Given that Nihonbashi once had a fish shore, there are still bonito wholesalers that are indispensable for soba, so it is natural that there are many famous soba shops that are said to be long-established soba shops.
Considering that there was a wholesale market in Tsukiji until the other day, the reason is the same as Nihonbashi.
By the way, there is a history that the fish shore in Nihonbashi was devastated by the Great Kanto Earthquake and moved to Tsukiji.
So, if you are aiming for soba-dori, Tsukiji is a place to suppress it.
It's very crowded with inbound! I think there are many people who have the image of this.
Inbound foreigners aim for a lot of seafood bowls and sushi (I think).
Soba shops are not very crowded. Please be assured.
There are a lot of good shops, but this time I went to Tsukiji Sarashina no Sato, a long-established store located in front of the station.
This shop has a deep history and is a truly long-established orthodox soba shop. I recommend it.

(Quoted from the website)
There is no problem with using it alone.
As soon as I entered the store, I was immediately guided to a single seat on the 2nd floor (in my fixed position).
There are four types of soba noodles in Sarashina no Sato.
Sarashina no Sato has four kinds of proud soba noodles.
①Handmade soba (28 soba)
②Savory soba
③Seasonal change soba
④Raw flour soba (10% soba)

All of them are wonderful gems provided by the careful work of craftsmen.
Of these boasted soba noodles
There is a dream-like menu where you can taste 3 kinds at once.
That is "Koseiro 3 colors soba" 1,300 yen (as of December 2024).
It is a menu recommended by Chuo-ku Tourism Association correspondent Soba chief.
Compared to the taste of dreams, 3 colors soba.
①In front of the photo → Savory soba
②Upper right photo → Handmade soba
③Upper left photo → Yuzu-kiri soba
It is 1,300 yen (as of December 2024) for tasting three kinds of specialty soba.
I think this is recommended for those who are visiting for the first time (my personal opinion)
Savory soba
Perhaps there is a recommended order of eating 3-color soba, but it may be.
This time, I got it from savory soba. It's a pure white soba.
It's a beautiful, transparent soba.
Contrary to the appearance, it is a solid soba that has a response to eating so that it really impressed.
The throat is excellent, and I feel like I'm eating soba.
It's a very elegant and delicious soba. This is delicious.
Sashina soba is a soba that uses pure white flour that takes out only the center of the buckwheat fruit.
You can experience high-quality soba by firmly entangled with Sarashina no Sato's specialty soup.
Handmade soba
This is handmade soba (Nihachi soba)
Home-grown buckwheat berries are made with a stone mortar, and buckwheat flour: Soba made at the ratio of flour = 8:2.
Nihachi soba itself can be enjoyed at various shops.
Because this shop uses high-quality buckwheat berries, the scent of buckwheat is very rich and it is appetizing.
It is so fragrant that you can easily imagine that soba is made from buckwheat berries.
Soba is really good to eat.
You can feel the strength of resilience unique to hand-made.
Soba seems to be used properly by examining the production area according to the season.
Even with the same handmade soba, the production area varies depending on the season.
At that time, you can also feel the spirit of the shopkeeper who wants to deliver the best soba to lovers.
Yuzu-kiri soba (seasonal change soba, December)
The third type of soba is seasonal change soba.
In short, it's a monthly soba.
The soba, which changes every month, tells us about the changing seasons.
In Sarashina no Sato, soba changes every month. That's why I'll come every month if I say something.
In December, it was a yuzu-kiri soba.
If you carry it to your mouth, the taste of yuzu spreads to your mouth.
The scent is exactly yuzu
The taste is exactly yuzu
The aftertaste is just yuzu
Everything is the taste of yuzu. I'm impressed.
The base soba is a high-quality soba as we have introduced. Combined with yuzu, it brings the best taste.
Yuzu is a feature of the cold winter season, as is known for Yuzuyu.
By enjoying yuzu-kiri soba and spreading the scent of yuzu, it will tell us about the arrival of the winter season.
You can enjoy winter soba in winter.
It's a luxurious moment for a little smart central ward.
A famous orthodox soba restaurant nestled in Tsukiji
In addition to the three colors introduced this time
Tenmori is also very recommended (Tenmori soba, which has 30 meals a day only for daytime on weekdays, is also good. I'm always looking forward to it because it's a weekly change. Be careful not to sell out.
The menu is also abundant.
There is also a seasonal menu.
I don't get tired of it.
Even though it is a long-established store founded in 1899, it does not stop walking.
We continue to provide the best soba noodles in the modern age of Reiwa to lovers.
The clerk's customer service is good, and you can enjoy soba in a good mood.
Tsukiji is a fierce battlefield for soba, but I think it is one of the famous shops that can be recommended with confidence.
